Favorite/unique menu item you will serve?
Selecting a favorite or unique menu item from FEAST is a difficult task, as each dish holds a special place in my heart and has been carefully crafted to delight our guests. However, if I were to highlight one particular menu item that showcases the essence of our culinary philosophy, it would be our “Ono Salt Beef Watercress Soup”. 100% local and delicious! From the beef broth, generous portions of tender beef and the Sumida’s Farm watercress. A dish loved by everyone. The ultimate refined grinds.

What did you learn from competing on and winning “Alex versus America” and how will you transfer these skills to your new restaurant at The Park?
Participating in “Alex versus America” was an incredible learning experience that truly tested my culinary skills and creativity. Competing against some of the best chefs pushed me to new heights and expanded my culinary repertoire.
One of the most important lessons I learned from the competition was the significance of time management and organization. The intense nature of the show taught me how to work efficiently under pressure and deliver exceptional dishes within tight time constraints. This skill has been invaluable in my career as it allows me to run a smooth and efficient kitchen, ensuring that each guest at my restaurant receives an unforgettable dining experience.
Another valuable takeaway was the importance of innovation and thinking outside the box. Competing on a national stage alongside renowned chefs challenged me to push the boundaries of my culinary creations and experiment with unique flavors, techniques, and presentation. I learned to embrace innovation and take risks in order to create dishes that are both delicious and visually stunning. This mindset continues to influence my approach at The Park, where I strive to create a menu that surprises and delights diners with unexpected flavor combinations and exciting culinary experiences.
